Camp Waffles
I have had the best summer job for the past three summers. I get to bake with the most engaging, enthusiastic and fun group of kids at a very special camp. The kids that come to camp are all experiencing cancer either themselves or a sibling. The campers show up with a lot of stuff going on! But at camp, they leave it behind and in cooking we just have a good time baking, eating and laughing. It is truly a blessing to experience this incredible camp and I am truly thankful for the opportunity to be a small part of an amazing big camp full of love, hope and pure fun! So my first day, I had no idea what I was doing or more importantly what would I do with these campers. We tried to set up a kitchen in a classroom and had some electrical problems and I was feeling like a disaster! With nothing planned for the first day-I grabbed my waffle maker and we were off! It was magical seeing the kids get so excited to mix the batter and eat home made waffles and I was in love with this camp and these campers!
Camp Waffles
Ingredients:
1 3/4 cup flour
1 3/4 cup buttermilk
2 Tbsp sugar
2 tsp vanilla extract
1 3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
2 eggs
4 Tbsp unsalted butter, melted and slightly cooled
Directions:.
Pre-heat the waffle iron.
In a large bowl, mix eggs, buttermilk, sugar, and
vanilla. Stir well.
3. Add flour, baking powder, baking soda, and salt.
4. Mix until incorporated. Be careful not to over mix!
5. Add butter. Stir gently.
6. Pour batter into the waffle iron. Enjoy!
